BABY OCTOPUS IN OYSTER SAUCE by Yiannis Tselepis

INGREDIENTS

For 4 persons

30ml soya bean oil

70gr carrot

70gr zucchini

130gr broccoli

60gr celery

80gr red pepper

80gr yellow pepper

80gr green pepper

800gr baby octopus

300gr baby squid

80ml white wine

120ml fish broth

70ml Oyster Sauce

30gr corn flour

salt and pepper

500gr rice linguini

PREPARATION

Clean all the vegetables, wash and cut the carrot, zucchini, broccoli, celery in the middle and diagonally. Cut the broccoli into florets and dice the peppers in medium size.

Take the octopus, wash it, remove the beak and boil it in plenty of water with a little vinegar for 35-45 minutes. Wash and clean the baby squid.

When the octopus is ready, slice it in pieces.

In a wok, after it is well heated through, pour in the soya bean oil and add the octopus and squid.

After stirring and tossing once or twice, add all the vegetables and stir gently, adding salt and pepper. After 1-2 minutes pour in the white wine, let it boil until the quantity is reduced by half then add the fish broth and the Oyster Sauce. Stir for 1 minute and thicken with corn flour.
