SHRIMPS WITH BEETROOT by Lefteris Lazarou

INGREDIENTS

For 6 people

800 g cleaned shrimps

300 g dry onion

200 g sliced leeks

500 g boiled beetroot

150 ml cream milk

250 ml white wine

Salt, pepper, balsamic vinegar

1 garlic clove

Olive oil

Parsley to garnish

PREPARATION

We sauté the onion in a saucepan with a little olive oil. We add the leeks and then we pour in the wine. We add the beetroot and continue to boil for 3 minutes. We put the mixture from the saucepan in a blender until it’s smooth like paste. The mixture is then returned to the saucepan and we pour in the cream milk. We season with salt and pepper. We place the cut up garlic in a small frying pan with a little olive oil and sauté it. We then sauté the shrimps from both sides in the same frying pan. They are cooled with a little balsamic vinegar and then we pour the whole mixture from the saucepan into the frying pan. We garnish with a little parsley and serve.
