MOUSSE WITH BITTER ALMOND SAUCE by JAN-LOUIE KAPSALAS
INGREDIENTS
100 ml milk
100 ml orgeat
100 gr almonds
100 gr cream
30 gr sugar
40 gr water
2 gelatin strips
a little amaretto
FOR THE SAUCE
50 gr sugar
50 gr cream
a little amaretto
PREPARATION
Mix milk, orgeat, water and sugar. Blend the almonds in a blender with the mixture already prepared. After mixing well, place it in a utensil and add the cream lightly beaten and the gelatin strips, after having dissolved them in boiled water. Add the amaretto and place it in mould of your choice. Finally place it in the freezer to set.
DRESSING
Place sugar in saucepan. When it starts to color pour in the cream and let it boil a bit until it thickens. Add the amaretto and it is ready.
